Spicy deodeok pork stir-fry

One Root,
Two Bowls of Rice?

The Korean root that meets sizzling pork belly. Deodeok is an aromatic Korean bellflower root with a pleasantly chewy, fibrous texture. Pre-cook it in perilla oil, bloom chili flakes in rendered pork fat, and add it at the end.

Ingredients — serves 2

Deodeok 150 g (about 10)
Pork belly 400 g
1 green onion
1/2 onion
1 red chili
1/2 Cheongyang chili
Rice wine 2 tbsp
Salt 1/2 tsp, pepper
Avocado oil, perilla oil
Sesame seeds

Sauce

Gochujang 2 tbsp
Syrup 3 tbsp
Soy sauce 1 tbsp
Minced garlic 1 tbsp
Rice wine 1 tbsp
Sesame oil 1 tbsp
Coarse gochugaru 2 tbsp

Directions

1. Peel deodeok the easy wayScore lengthwise, blanch for 30 seconds, rinse in cold water and peel.
2. Split and poundCut lengthwise and pound flat. Season lightly with salt.
3. Pre-cook deodeokLightly sauté with avocado and perilla oils, then set aside.
4. Season porkCut into bites; add 2 tbsp rice wine, 1/2 tsp salt and pepper. Rest 10 minutes.
5. Mix sauceCombine gochujang, syrup, soy sauce, garlic, rice wine and sesame oil.
6. Build smoky flavorSear pork. When fat renders, add 2 tbsp coarse gochugaru and stir-fry briefly over high heat.
7. Finish in orderAdd onion and green onion, then sauce. Add the pre-cooked deodeok last; finish with chilies and sesame.
Key tip: add deodeok last so it stays firm rather than turning soft.

Ingredient guide for cooks outside Korea

Deodeok (더덕) is Korean bellflower root. Look for fresh or peeled deodeok at H Mart, Korean supermarkets, or Korean grocery websites. Gochujang is fermented red chili paste; gochugaru is Korean chili flakes; perilla oil is a deeply nutty seed oil sold near sesame oil.

Editor substitutions—not substitutes stated on the TV show: pork shoulder for pork belly; honey or corn syrup for oligosaccharide syrup; neutral oil for avocado oil. Burdock root or king oyster mushroom can mimic part of the chew if deodeok is unavailable, but the flavor will not be the same and the result should not be presented as the original TV recipe.
